Amara Greens (21-40 Days)
An uncommon green, also known as Ethiopian Kale or Abyssinian mustard, a popular leaf crop in Africa. Dark green leaves are harvestable in a few weeks and have a mild cabbage and savory garlic flavor. Leaves and young stems can be eaten raw or cooked. Adds a zesty flavor to salad mixes; baby leaves can be used whole, while the younger growth can be finely chopped and then added. Older leaves and immature flower stems can be cooked or sauteed. We let ours grow all summer; it reached over 3 feet and made the pollinators happy when it flowered.

Germination: 4-10 days
Germination Temperature: Optimum soil temperatures 60-70ºF.
Seed Sowing Depth: ¼" deep
Sowing Outdoors: Starting in spring when soil temperatures reach 55-60ºF. Sow 30-40 seeds per foot for baby greens. Thin to 6-8" apart for larger leaves. Sow every 2-3 weeks for a continuous harvest.

Harvest: Mature greens- cut at 12-18", Baby greens - cut at 3-6"
Tips: Mustard greens should be planted in fertile, well-drained soil. Work compost or well-rotted manure into your soil before planting. Provide adequate, even moisture for the best growth, especially from the middle to the end of summer. Mulching helps retain moisture.
