The roots do take a long time to develop but eventually grow to a length in excess of a foot. The flavor is delicious – sort of bittersweet. Burdock is also thought to have medicinal properties. Burdock needs to grow in rich, well-drained, deep loose soil for large long roots.

Great. Forgot to dig all

Great. Forgot to dig all of it up last fall and three plants came back this spring. Planting again this spring. An excellent fall vegetable.
