SLIM JIM EGGPLANT (60 days)

3

Germ 5-14 days
Another terrific variety from our Italian friends at FratelliIngegnoli. Exceptionally early, we were harvesting eggplants from Slim Jim before some of the other varieties even had blossoms. Harvest at any size, but 4-5” is best. Fruits are long, slender, and purple. Flavor is mild. 30 seeds

PLANTING:

Indoors- Start 8-10 weeks before last frost, 1/4” deep with soil temperatures 75-80 degrees. Liquid fertilize seedlings every 7-10 days. Transplant 18” apart when danger of frost has passed.

Harvest- When fruit is shiny and smooth, before losing its luster.

Tips- Plant in fertile soil, water with compost tea every two weeks and use row cover to give the plants extra warmth, especially in the north. Mulch and keep well watered.

Beautiful plant tasty fruit

Updated from earlier review. I had eight plant, at least 4 too many Very prolific, good tasting, beautiful purple plants( spikes=oh hues). I made batches and batches of ratatouille and gave tons away( think "zucchini " like lol), made ratatouille soup to freeze. Beautiful fairly sturdy plants although I did have to stake them due to the dozen or more eggplants on each vine pretty much constantly. Only problem with them is I really wanted to make eggplant parm with them and the fruits aren't good for that, too small in diameter and not really long enough to slice length wise for that dish. Grilling kind of the same problem. So won't be growing them this year . Is year but for any other use they are good.

slimjim eggplant

Wonderful, compact, and productive. I started the seed indoors 2/18/17, planted in outside pot 6/4 after outdoor hardening a few weeks. As of 6/14/2017 the plant has over a dozen baby eggplants, some already 4" long. Lots more flowers too, so looks like it will keep up that pace of production. It is in a 22" pot with good compost and regular fish emulsion. Attractive large leafed plant, but the occasional spines on the leaves do bite!
