Mildly pungent, White Mustard is the mildest out of the three mustards. White Mustard is easy to grow. Harvesting starts 70-90 days after planting, just as the seed pods develop a brownish tinge. The hotter and drier the climate the faster it goes to seed. Hang in a bag to dry for a couple of weeks, then shake the bag vigorously to release the seeds. Store seeds in an airtight jar until ready to grind. Grind with an herb grinder or grinding implement.
